Methods of preservation such as pasteurization, concentration, edulcoloration and chemical preservation were used in order to evaluate their effects on the sapodilla pulp conservation. A complete randomized design was used with four replicates for treatment. The pulps were characterized based on color and the extraction yield for each one was recorded. Pulp were distributed in 250 g samples, packed in polyethylene bags and stored at 25 - 30°C. The data indicated that there were no major differences in terms of chemical composition despite the color difference and the best response was observed with the edulcoloration treatment with a 45-day conservation period.
