The purpose of the project was to determine the standard time for each activities during milk pasteurization and the unnecessary operative movements in a milk derivative company using time studies and movements. Direct and sequential observation were used to determine flow diagrams, times, distances, activities, operations, dead times, waits, storages and registered transports in analytic flowcharts, time formats and operative displacement formats. Two proposals were formulated to improve the work methods, because of the lack of data it was not possible to approach evaluation and correction in the present process deficiencies A complete randomized design was used and Dunnet test was applied (5%) for mean reparation. Significant differences among pasteurization and standard times of the process were detected.
